Extra Virgin Olive Oil D.O.P. Veneto Valpolicella is a type of olive oil that is produced in the Valpolicella area of Veneto, Italy, and has been granted Denomination of Protected Origin (D.O.P.) status. It is made from a blend of different varieties of olives grown in the region, such as Favarol, Grignano, Leccino, and Casaliva. The olives are cold-pressed to extract the oil, which has a fruity, slightly bitter, and peppery flavor with a golden-green color. This type of olive oil is often used in salads, dressings, and dipping sauces.
Yellow in color with a slight shade of green for fresh oils, it has a balanced taste. On an aromatic level it has good intensity, devoid of defects, characterized by olive aromas accompanied by fresh vegetables followed by fruity hints, dried fruit, and spicy notes. It leaves an aftertaste of almonds and artichoke.
