Pork leg salted and cured for a period no less then 18 months, every 3 months is naturally smoked for a period of 24hrs, once it is ready, it goes through precise tests to ensure its flavour. It is well-marbled with a highly elastic texture and deep flavor. It has a savory, smoky taste that’s laced with spices. Speck is excellent served on its own as a savory snack or antipasto.
