Description
Parmigiano Reggiano is an Italian hard, granular cheese produced from cow’s milk and aged at least 12 months. It has a hard pale-golden rind and a straw-coloured interior with a rich, sharp flavour. Under Italian law, only cheese produced in particular Italian provinces may be labeled “Parmigiano-Reggiano,” and European law classifies the name, as well as the translation “Parmesan,” as a protected designation of origin. Although Parmigiano is good enough to eat alone, it is most often used in recipes. Parmigiano-Reggiano is typically added at the end of the cooking process so the cheese does not melt entirely and the flavor is not diminished.
